TEQUILA FACTS
Tequila as we know it was born in 1758 when the Cuervo family began commercially distilling the blue agave plant. In order to be classified as tequila, the liquid must be produced in the state of Jalisco and contain at least 40% alcohol to be sold in the United States.
Typically, tequila is produced in three styles.
Blanco tequila is distilled and not rested. Blanco tequila that is "rested" in white oak barrels for 2-11 months becomes Reposado, and when rested for 12 months or longer, becomes Añejo. Mezcal is tequila's "cousin" and is also made from blue agave. Instead of boiling the agave, mezcal is made by roasting it. This gives the final product a smooth, smoky flavor.
